325 g Plain Flour
1 Tbsp Baking Powder
1/2 tsp Bicarbonate of Soda (Baking Soda)
175g Caster Sugar
250g Natural Yogurt (Plain Yogurt)
100g Unsalted Butter, Melted
2 Medium Eggs, Beaten (Large Eggs)
1 Large Banana, Peeled and Diced
150 g Strawberries, Green Tops Removed, Halved and Sliced
Preheat Oven to 190 C (375 F).
Sieve together the flour, baking powder, and bicarbonate into a large bowl.
In another bowl mix together the sugar, yogurt, melted butter and the beaten eggs.
Pour the wet ingredients into the dry and mix gently. Half way through mixing add the banana and strawberries – do not over mix!
Divide the mixture betweeen 12 Paper Cases or Silicon Muffin Tray.
Bake for 15 to 20 minutes, until golden. (Mine took 20!)
Leave to cool on a wire rack! Enjoy!
