What’s for dinner?

Somewhere along the way, I got out of the habit of planning meals in advance. I found myself asking ‘what’s for dinner?’ upon arrival home from my Uni commute and more often or not the answer involved quick cooking carbs. Lots of stuff purchased with the best intentions never made it onto a plate. Which, when I think about it, is probably the reason we’re both spending more on groceries and wasting more food.

I’m seeking to remedy this and make menu planning a priority once again. I figure if I get back in the habit now, when both the Boy and Hubby are still at school and work it will carry forward to next academic year when I really must do it. Do you find it hard to stick to a meal planner when your life gets hectic? I imagine it can’t just be me…

Our Weekly Menu Plan

Monday the 24th: Eggy Pots (Made by the Boy) with Potato Letters followed by Stove Top Rice Pudding

Tuesday the 25th: Blackened Cajun Chicken Breasts with Quinoa Black Bean Salad

Wednesday the 26th: Homemade Veggie Balti with Basmati Rice

Thursday the 27th: Penne with Tuna, Tomato & Sweet Corn

Friday the 28th: Slow Cooker Veggie Chilli

Saturday the 29th: Gnocchi with Creamy Tomato and Spinach Sauce

Sunday the 30th: Some Sort of Proper UK Sunday Dinner

    I was wondering if you could tell me what Uni you go to? I am desperately trying to decide on where to apply. I was accepted at the University of East London but I seriously can’t afford to live in London and it’s not somewhere that I really want to raise a 9 year old and 11 year old.
    I will be applying to UCAS soon, I’ve narrowed it down to a couple… I just don’t want to commute too far!
    As for your blog post… I was doing the same and I was realizing I was spending hundreds more on food than I needed to. I have started to do a weekly list as well. So far I’m saving a lot!
