This week represents my first full week back at university. Today was introduction to third year and the beginning of our design project. I have a feeling that in order to survive this year I need to get very good at planning ahead and scheduling my time wisely.
I’ve decided that the Boy is go to the normal after school club at least once a week in addition to swimming and whatever other club he’s chosen for that particular half-term. Today was his first day there and I arrived to find him building a huge lego ship with two of his classmates. I honestly don’t feel guilty about it at all – which is nice.
On the food front, hubby surprised us on Sunday by bringing home steak and asparagus. Needless to say I’m not planning mostly veggie meal plans for now. Which is brilliant because this rainy weather has me hungry for cottage pie, beef stew, and my chicken leek pie. All of which I plan on making in the next week or two, of course. I just hope Hubby joins us in eating them!

Monday the 24th: Chicken Nuggets & Chips for the Boy, Chicken Korma for Me, & Whatever Hubby Wants
Tuesday the 25th: Cottage Pie with Carrots
Wednesday the 26th: Spicy Lemon Broccoli Pasta – My Way
Thursday the 27th: Baked {Jacket} Potatoes with either Baked Beans and Cheese or Tuna Mayo and Sweetcorn
Friday the 28th: My Chicken Leek Pie
Saturday the 29th: Homemade Veggie Balti
Sunday the 30th: Roast Beef, Potatoes, Peppers, Onions, Carrots, Parsnips, Yorkshire Pudding & Gravy
