We’ve been back in the UK for almost two weeks now and I still haven’t found my groove when it comes to cooking. The past two weeks I’ve not drafted menu plans. It’s not that I haven’t cooked some of our favourite meals, it’s that I just feel a bit lost and suspect having a plan will help. I also suspect packing away my summer wardrobe will help too. After all, out of sight, out of mind and all that.
I don’t know why, but I just feel like it’s time for a change. So, this week I’m going to try making some of our favourite recipes vegan. Hopefully this will make feeding Hubby, who’s gone vegan again, a little easier. First on my list of recipes to recreate is carrot cake. Come back on Wednesday to see how it turns out!

Monday the 17th: Spicy Lemon Broccoli Pasta
Tuesday the 18th: Baked {Jacket} Potatoes with either Baked Beans and Cheese or Tuna Mayo and Sweetcorn
Wednesday the 19th: Ecuadorian Quinoa Vegetable Soup with Fresh Baked Bread
Thursday the 20th: Penne with Tuna, Tomato and Sweetcorn
Friday the 21st: Homemade Pizzas with Peppers, Courgettes (Zucchini), Red Onion, and Olives
Saturday the 22nd: Creamy Vegetable Pie

Sunday the 23rd: Roast Sausages, Potatoes, Peppers, Onions, Carrots, Parsnips, Yorkshire Pudding & Gravy

I love the sound of the Ecuadorian Quinoa Soup, am definitely going to try that one.
Last night I tried a new recipe for Chocolate Avocado pudding and it was heavenly! I’m off to post it now.
@Ramshackle Mama I’ve heard of Chocolate Avocado pudding before, but I’ve never been brave enough to try it! The Ecuadorian Quinoa Soup is gorgeous and is a family favourite at our house!
