I made this for the first time last week and really enjoyed it!
1 lb salmon fillets cut into 1 inch cubes (400g)
1.5 tbsp soy sauce
2 tbsp ketchup
1 tbsp vinegar
1 tbsp sweet chili sauce
2 tbsp dark brown sugar
Place everything but the salmon in a small sauce pan and still over low heat until all the sugar is dissolved. Pour into an ovenproof dish and leave to cool. Add the cubes of salmon and stir to coat them. Leave to marinade for at least one hour. Bake covered for 20 minutes at 200 C/400 F. Uncover and bake another 5 minutes.
Nicholas and I had this with his favourite egg noodles with peas and corn, but it would be great over rice too. Hubby wasn’t a big fan of this and found it too sweet for his taste.
